How to make blackberry jam. Blackberry jam without cooking

Blackberry jam is a wonderful product on our table. Fragrant, very tasty and incredibly healthy, it will delight you both in the autumn weather and in the winter cold with pleasant memories of summer days, and will also give the body those vitamins and microelements that will help cope with any ill health or blues.

Beginning housewives often ask: “How to make blackberry jam? How much sugar should I put in? How long should I keep it on the fire? What kind of container is best to do this in?” etc. Bringing to your attention various recipes, we will dwell on each of the issues in detail. After all, many recommendations are universal and tell not only how to make blackberry jam, but also how to make jam in general, from any fruit and berries.

The first recipe is called “quick” or “five-minute”. This is how raspberries, strawberries, wild strawberries, currants and other small berries are prepared. The raw materials must be of good quality, preferably a little unripe, without spoiled specimens. Blackberries are quite tender, so as soon as you pick them from the bush, put them into processing. Do not wait for the product to become succulent. This especially applies to how to cook blackberry jam in 5 minutes. If the berries spoil, such preservation will not be stored for long. Therefore, sort them out, pour them into a colander, and rinse them in running water. The preparatory work is now complete. Let's start cooking.

Cook for 5 minutes

Wide copper basins, brass or stainless steel, are best suited for jams, marmalades and marmalades. In addition, you can use ordinary cast iron or cauldrons. But enamel pans are not suitable, as berries and fruits burn in them. How to make blackberry jam? Pour the berries into a cast iron or basin and cover them with sugar at the rate of 1 to 1.5. Thus, for every kilogram of berries there is one and a half granulated sugar.

At first, of course, half the norm will be enough. Sugar is necessary for blackberries to release juice. Cover the cast iron and place it in a cool place for 4-6 hours, from night to morning. Then add the rest of the sugar and place the cast iron on the stove over high heat. When the jam boils, reduce the heat to low and cook the berry mass for exactly 5 minutes, stirring. Then, straight from the stove, pour it into dry, sterilized jars and seal. Turn the jars upside down, cover and leave to cool for a day. Then take it to the cellar. You can make such delicious blackberry jam in just 5 minutes! Not difficult, right? By the way, it is not necessary to roll it with tin lids - you can also close it with ordinary plastic ones. In this case, only the jars should be stored in a cool, dry room or on refrigerator shelves.

Assorted jam

If the food of the gods - ambrosia - is not an invention of the ancients, then this is probably the most wonderful blackberry jam, the recipes for which we offer you. In particular, assorted raspberries and blackberries. Not only does it taste amazing, but the aroma is divine. And preparing the delicacy is also quite simple.

Ingredients: 1 kg of each type of berry and one and a half to two kilograms of sugar. What should you do? Of course, sort through the raw materials, sort out the unusable specimens, and rinse them in water. Then transfer the berries to a cooking bowl, sprinkling them with sugar. Place in a cool place to release the juice. And after 6-8 hours, start cooking over low heat first so that the sugar dissolves well. Then make it larger and let the berries boil well. Stir with a wooden spatula to prevent the raw materials from burning. Cook the raspberries and blackberries over fairly high heat for half an hour, skim off the foam and scum. Pour cast iron jam into prepared jars and seal. This cooking method is also fast.

Original jam

Here's another interesting recipe for making blackberry jam. Surely many housewives will like it. The peculiarity of the preparation is that, in addition to berries, blackberry leaves are also taken as raw material. Ingredients for jam: 1 kilogram of sugar and blackberries and 100 g of leaves. And also half a liter of water and 5 g of acid - citric or ascorbic. Make a decoction from the leaves and water. Cooking time - 20 minutes. Pour 1 cup (250 g) of the broth into a saucepan, add sugar and prepare syrup. Sort the berries, wash them, place them in a cast iron pot or basin. Pour syrup over them and leave until juice appears. Next, add the acid and put it on the boil, pouring in the rest of the leaf infusion. The process should last 15-20 minutes. After this, transfer to sterilized jars and close. This jam is distinguished not only by its special pleasant taste. It is also very healing and restores strength.

Raw "assorted"

This jam can be made only from blackberries, but it will be more appetizing and healthier if you take equal parts of strawberries, raspberries, blackberries, honeysuckle or currants. The main thing is that for 1 part of berries there is one and a half to two parts of sugar.

Sort the freshly picked fruits so that there is no debris, leaves, or sepals. Rinse the strawberries and honeysuckle and let the water drain. Raspberries and blackberries do not need to be washed. Pour sugar over the berries, mix, place in jars, and screw. Store canned food in a cool place.

Blackberries are a tasty and healthy berry, from which various winter preparations are prepared in the form of preserves and jams. It is added to compotes and marmalade is made. Its unusual properties and rich aroma make it possible to use it in combination with other wild berries and popular fruits - lemon, apples, pears, cherries, etc. It harmoniously complements their taste and increases the number of important elements in the finished product.

Jam according to “grandmother’s recipe” - a tasty and juicy jam for the winter

The classic recipe for harvesting wild berries is known to many who like to stock up for the winter. Processed blackberries have a delicate, sweet taste, perfect as a filling in various pies, cakes and pastries, or as an addition to pancakes and bread in combination with aromatic tea.

To prepare such jam you will need a minimum of ingredients, namely:

  • fresh blackberries - 2-3 cups;
  • granulated sugar - 200-300 grams;
  • lemon juice - 1 tbsp. l.

The blackberries are poured into a colander or onto a table sieve and washed thoroughly under running water, and then left to dry for several hours. Then the berries are transferred to a clean, deep container and crushed with a spoon or a special crush so that they release the juice.

Sprinkle the resulting mass with sugar on top and pour over lemon juice, leaving to infuse for 2-3 hours. Pour some water (100-150 ml) into the pan and place it on the stove. Lightly sugared, crushed berries are poured in there and brought to a boil, stirring thoroughly, then simmered over low heat for another 10-15 minutes.

The foam that forms during the cooking process must be removed with a wooden spoon so that it does not affect the taste of the final product. As soon as the composition becomes homogeneous and thick enough, the hot jam is poured into sterile and washed glass jars, the lids are rolled up and they are allowed to cool.

After this, they are sent to be stored in a cool cellar or on a shelf in the refrigerator. If you add a little pectin or gelatin, this jam will be stored for a long time at room temperature.

Homemade marmalade - a delicious and natural dessert

The technology for preparing blackberry marmalade is no different from that used for preparing other wild berries, such as raspberries, wild strawberries or strawberries. However, with the right recipe, blackberries can be used to make a richer, firmer dessert with a harmonious taste and a large number of beneficial properties.

To make marmalade at home, take the following ingredients:

  • forest or garden blackberries - 1 kg;
  • granulated sugar - 1 kg;
  • food gelatin - 60-80 g;
  • molds for hardening marmalade slices.

Both fresh, whole blackberries and slightly spoiled or overripe fruits that remain after making jam or compote are suitable for making marmalade. First of all, the berries are sorted, cleaned in a colander under running water to remove pollen, remaining leaves and other contaminants and allow the water to drain.

Pure berries are poured into an enamel pan and filled with a glass of water. Sprinkle two cups of sugar on top and allow the blackberries to lightly sugar for 2-3 hours.

Now place the container on low heat and bring to a boil, stirring the ingredients with a wooden spoon to form a thick syrup. Once the desired consistency is achieved, remove the pan from the heat and strain its contents through a fine sieve to filter out all the seeds.

Upon completion of the process, place the container with the syrup on the stove again and simmer it for 10-15 minutes over very low heat, adding the remaining amount of sugar with a tablespoon.

In 10 minutes. after cooking, add 1-2 tablespoons of edible gelatin, stir it thoroughly and after 1-2 minutes turn off the heat and allow the syrup to cool slightly. Now pour everything carefully into molds prepared in advance and put it in the refrigerator until completely hardened. The remaining amount of blackberry syrup can be rolled into glass jars and left until winter.

Harvesting blackberries for the winter - how to freeze berries correctly

If there is a good harvest of blackberries, then some of it can be prepared frozen in order to prepare some tasty delicacy from fresh fruits in winter. Proper freezing allows you to completely preserve all the taste and beneficial components of this beautiful and aromatic berry.

The first step is to thoroughly and carefully wash the berries with clean water. To do this, place them in a colander or on a sieve and hold them under the tap for several minutes, shaking the dishes a little, or wash them carefully with your hands.

Then the blackberries must be dried at room temperature. Place the berries on a paper towel or a wooden surface, such as a cutting board, and let them dry for 1-2 hours.

It is necessary to lay out so that the fruits do not touch each other.

Towels, tablecloths and other cotton fabrics are usually not used, since blackberry juice is very “corrosive” and washing it without special products is quite problematic, unlike raspberries or strawberries.

As soon as the berries are washed and dried, they proceed directly to freezing. It can be sent to the appropriate chamber either whole or combined with sugar.

In the first case, the fruits laid out on a board or tray are sent for preliminary freezing and left for 2-3 hours at the lowest temperature set in the freezer.

Then the frozen berries are taken out and moved into plastic bags or containers in layers 8-10 centimeters high and sent for long-term storage at the optimal temperature.

At this stage, you can add a little sugar to the berries. It is believed that this way it will be stored even better. To do this, when placing blackberries in plastic containers, sprinkle each layer with it, then close the lids, shake the container slightly and put it in the freezer.

To obtain the finished puree before freezing, you can crush the blackberries or pass them through a blender, mix well with sugar, add a little gelatin and then put them in the freezer according to the technology.

Assorted berry jam with lemon

Adding lemon to juicy and ripe wild berries allows you to get a thicker and richer consistency. In addition, lemon promotes better preservation and makes the jam taste refreshing.

For preparation, various combinations are used in the form of raspberries, blackberries, blueberries and blueberries. Selected berries are washed with water in one container or separately, removing all contaminants.

Lemons are rubbed on a coarse or medium grater to obtain the zest, and the juice is squeezed out in a juicer or by hand into a separate glass or bowl.

Pour 50-100 ml of water into a clean pan, then pour some of the berries, sugar on top, again berries and granulated sugar again to make 2-3 layers. And they leave everything to “sugarify” for several hours. When the fruits release their juice, sprinkle them with fresh lemon zest and some citrus juice.

Now mix all the ingredients thoroughly, turn on the heat and bring to a boil. Then cook over low heat for another 30-40 minutes, stirring continuously and skimming off the top foam with a wooden spoon.

When hot, the syrup is poured into sterilized, clean jars, covered with lids, turned over, allowed to cool and sent to dark shelves in the cellar until winter.

Blackberry wine - a simple recipe for a refreshing drink

Homemade wine is made from various fruits, such as apples or plums. But a properly prepared berry drink has a special aroma and taste. Blackberries, like no other berry, are suitable for making homemade mash due to their unusual structure and very aromatic juice.

To prepare one 5-liter bottle according to the old Russian recipe you need:

  • ripe blackberries - 2-3 kg;
  • granulated sugar - 1.5-2 kg;
  • natural flower or bee honey - 300-400 gr.

Fresh berries are carefully sorted, if necessary, additionally washed and sorted in a stainless container. As soon as they dry, they need to be crushed in a blender or potato masher so that they release as much juice as possible.

Then they are filled with water (1-1.5 liters for the entire volume), covered with clean gauze and left at room temperature on a windowsill or outside for 2-3 days. During this time, natural fermentation of the juice will begin. Meanwhile, water is mixed in a saucepan with sugar and honey, brought to a boil and the syrup is cooked for 15-20 minutes over low heat.

Now the liquid from the berries is carefully drained, the wort is filled with chilled syrup and everything is poured into glass bottles, closing them with special lids through which they can “breathe.”

The containers are left in this form for 1-1.5 months, while the condition of the drink is constantly monitored. After this period, when the liquid in the bottles becomes a little clearer, it must be strained through cheesecloth, poured into new, more compact containers, tightly closed with lids and put in a dark cellar or basement for 2-3 weeks so that the wine can infuse properly.

The taste of this drink is sweet, very refreshing, and it is not as intoxicating as, for example, wine made from apples, plums or plum juice.

Blackberries are a very interesting ingredient that opens up a wide field of imagination for chefs. It has a bright taste, in which sweet notes predominate, but at the same time there is also a spicy light sourness, which balances the flavor bouquet. Therefore, it is not surprising that blackberry jam turns out to be very aromatic and you want to eat it again and again. Kids really like to spread it on a slice of fresh bread or simply devour it on both cheeks, washing it down with hot tea.

All-blackberry jam or a product made with the addition of other ingredients will definitely please your household. Below you will learn how to make this delicacy in several ways.

How to make blackberry jam: recipes with photos

Blackberries are not only used as the main ingredient for jam, but also frozen. The tasty berry is extremely healthy due to its composition, which includes many vitamins (C, B, PP, K, E), organic acids, minerals and pectin, tannins, fiber and other components. Therefore, blackberries become indispensable in winter, when the body does not have enough microelements to fight diseases. The berry copes well with colds, lowers fever, alleviates pneumonia, improves immunity, and strengthens blood vessels.

The first step in preparing delicious jam will be the correct selection of berries and their preparation. It depends on what kind of jam you end up with. The season for blackberries to appear in large quantities is at the end of August, at which time you can buy a lot of berries at a not too high price. A few rules for selecting and preparing a product for winter preparations:

  • When choosing berries, give preference to ripe, firm fruits. Softened, beaten blackberries are also suitable if you want to make a liquid jam that involves chopping them.
  • Take only ripe fruits. Unlike some other berries, blackberries cannot ripen at home. Jam made from prematurely harvested fruits will turn out sour.
  • Before starting cooking, thoroughly treat the berries to remove any adhering debris, leaves, or dust. Then wash the product under the kitchen shower; this spray of water will not damage the structure of the blackberries. You need to remove the ponytails after cleansing with water. Do this in gentle circular motions to avoid damaging the surface of the blackberries.

A separate important step should be the sterilization of the jars, thanks to which the jam will retain all the beneficial substances and will not spoil. To do this, take glass containers of a suitable size, fill the pan with water, boil it, and place a wire rack on it. Place the jars on top. Leave for fifteen minutes while they are sterilized by steam. The lids also need to be sterilized before twisting the jam. Below you will learn several interesting recipes for preparing a delicious delicacy for your home table.

From frozen berries

Frozen blackberries are a storehouse of nutrients and microelements. If you didn’t have time to make delicious jam from fresh berries in the summer, you can use a frozen product. The jam will turn out no less tasty and nutritious. You need to freeze whole blackberries, packaged in bags - this will allow you to quickly cook small portions of jam. To make the finished treat even more delicious, add strawberries. What ingredients will you need to make jam:

  • Half a kilo of frozen strawberries and blackberries.
  • A kilogram of sugar.
  • Two tablespoons of lemon juice.
  1. Place frozen berries in a saucepan. Sprinkle them with sugar and let them sit for several hours. The berries should melt and the sugar should dissolve. The blackberries and strawberries will release a lot of juice, so scoop out about a third of the cup.
  2. Add a little lemon juice to the resulting mass. Thanks to it, the jam will acquire a pleasant sourness.
  3. Place the pan on low heat and wait until the berry mixture boils. After boiling, turn up the heat and cook for about five minutes.
  4. Please note that the pan must have high sides. This is due to the peculiarity of such jam during production: during a five-minute boil over high heat, the mass rises high, reaching almost the very edges of the container. To prevent the jam from leaking out, it is better to use a deep pan.
  5. Let the mixture cool. Transfer to a selected container. If you eat it in the near future, you may not need to roll it up. The delicious product is ready!

Jam recipe:

  1. Carefully peel ripe, fresh berries. Remove dirt, remove tails and leaves, if any. Divide all the fruits in half.

  3. Let the mixture cool. Take a sieve and press the still warm berries through it. This is necessary in order to get rid of the seeds, which will make the jam crispy.
  4. Take a large basin and pour the resulting seedless pulp into it. Heat the container over low heat and let the blackberries simmer for about five minutes. After the time has passed, add the rest of the product along with sugar.
  5. The time spent on further cooking is determined individually. Remove from heat and roll into jars when you are satisfied with the consistency of the resulting jam.

Fresh blackberry jam recipe

Frozen strawberry and blackberry jam in 5 minutes

If you didn’t have time to make jam for the winter, then it doesn’t matter, it can be made as needed from frozen berries, and not just strawberries. In general, I came up with the idea that during the berry season it is not necessary to stand at the stove for days, cook jam, wash, sterilize jars (you also need to find them in large quantities).

You can buy a large freezer and just freeze all the berries in bags, then in the winter you get a batch of berries, make jam, and when it runs out, make more. I will most likely do this next season, but for now I’m making jam from store-bought frozen strawberries with the addition of blackberries.

In general, this jam cooks very quickly, this recipe for strawberry jam takes five minutes. One caveat - frozen berries give a lot of juice when they thaw, so if you boil the jam for only 5 minutes, it will remain liquid.

Options: 1 . You can also eat something that’s a bit runny, my husband loves it. 2. You can boil it two or three times for five minutes (after each boiling, the jam is cooled). 3 . You can drain off a little excess juice before cooking - I usually do this and then after 5 minutes of boiling the jam will thicken normally.

Ingredients for making frozen berry jam

For that, to make jam from frozen strawberries and blackberries in 5 minutes I needed:

frozen blackberries - 0.5 kg.

sugar - 1 kg (or a little less)

lemon juice - 2 tbsp.

Recipe for making Five-Minute jam from frozen strawberries and blackberries

I put frozen berries (strawberries and blackberries) in the pan.

I covered the berry with sugar and left it for 2-3 hours so that the berry melted and the sugar dissolved.

Here you can see that the berry has released a lot of juice; about a third of the glass can be scooped out.

First put the pan on low heat and brought the mixture to a boil. As soon as the strawberry jam boiled, I turned the heat on high and cooked for exactly 5 minutes.

Take a larger pan, as the jam rises a lot, almost to the edge of the pan. The trick is that it should boil for 5 minutes, but over high heat. I don't clean the bake.

It is better to cool the finished jam, transfer it to a jar and put it in the refrigerator.

Here is one option for making jam from frozen strawberries or other berries. If you have any advice, I'd be glad to learn something new.
