Apples in syrup on a stick. Caramel apples as a business: reviews

I’ve long wanted to make caramel apples on a stick for my daughter: it’s both delicious and healthy! To make the delicacy look more elegant in plates, choose small fruits and remember that caramel is viscous, and therefore it will still reach for the apple. But if you want to get a shiny top sweet layer on your dessert, then cook not caramel, but regular sugar syrup, without letting it change color. You can add any dyes to this syrup: red, green, blue and your apples will become multi-colored. When preparing a dish for this dessert, your apples will be rosy and caramelized!

I recommend choosing sour or sweet-sour varieties of fruit, so that when you combine them with sweet-salty caramel, there is simply an explosion of flavor in your mouth. My apples tasted like pineapples - it was something incredible!

So, let's prepare all the ingredients and start cooking!

First of all, rinse the apples in water and pat them thoroughly with a waffle or paper towel, getting rid of moisture, since caramel will not stick to a wet surface!

Pierce each fruit with a wooden kebab skewer. You can also use wooden ice cream sticks.

Pour granulated sugar, salt into a cauldron or saucepan, add lemon juice or citric acid and water. Place the container on the stove and bring its contents to a boil. Lemon juice is an important component; it prevents sugar from crystallizing, and you will be sure that your syrup will definitely turn out the way you imagined it. As soon as the syrup bubbles change their color to brownish, remove the container from the heat.

Pour in the cream and stir immediately, making sure it is thoroughly incorporated into the syrup.

While the caramel is hot, we will dip the apples on skewers into it and place them on a stand so that the excess caramel drips off. Let's do this with all the fruits. As soon as we finish, we start again with the first apple, dipping it into caramel a second time. So to speak, we will apply a second layer, etc., until our sweet and salty sauce is gone. Place the dessert in the cold for about 20-25 minutes.

As soon as the caramel hardens, becoming slightly viscous, transfer the apples to a dish or plate.

We will serve apples in caramel on a stick for dessert. If desired, you can sprinkle the caramel with almond or nut crumbs, grated chocolate, multi-colored sprinkles - it all depends on your imagination!

Probably, many have seen in American films how heroes at fairs buy bright apples on sticks, covered with multi-colored glaze. However, few people realize that such a delicious dish can be easily made at home. Caramelized fruits are quite easy to prepare, they turn out extremely appetizing and filled with useful substances. This dessert will appeal to both adults and children.

Properties and calorie content of the dish

The calorie content of apples in caramel may vary, but the minimum is about 110 kilocalories per 100 grams of product. Of course, the more complex the caramel recipe, the higher the calorie content of the entire product. This dessert retains all the benefits inherent in this fruit, but it is important to remember that excessive amounts of sugar can be harmful to tooth enamel.

What varieties are best to use?

For this dish, you need to choose apples that are firm and moderately sour; it is recommended to take a medium size. Varieties such as Granny Smith, Cox and Golden Delicious meet the above requirements. Among the garden varieties and the most accessible ones, the “Ranetki” variety is suitable.

For dessert, you can choose different types of apples, with soft ones more suitable for processing whole fruits, and hard ones - for slices.

General cooking principles

Homemade caramel apples require firm, whole and fresh fruits. Of course, spoiled apples with dented sides or holes from insects are not discussed. You should also not pay attention to overripe or too loose fruits. Caramelized fruits look neat and beautiful if they are small in size. If the caramelized apples are red in color, it is better to make the glaze transparent. Before preparing the dish, it is important to wash the fruits well and, most importantly, dry them, since the presence of water droplets leads to uneven caramelization.

You can prepare caramel fruits in different ways: in a frying pan, in the oven, on the stove - the technology is basically the same. Baked apples are also good, and caramelizing fruits in a slow cooker is quick and easy. The base for sugar syrup can be either regular granulated sugar or ready-made sweets, such as toffees. Spices and seasonings, syrups and various types of oil are often added to them. At the first stage, caramel is usually cooked, at the second stage the fruits are caramelized, and at the third stage the finished fruits are rolled in a variety of toppings. It should be mentioned that the characteristics of caramel largely depend on the correctness of the sugar melting process. This needs to be done over low heat and never bring to a boil.

Recipes

A rather unusual way of preparing this dish is as follows. You need certain ingredients: ten apples, two glasses of granulated sugar, 100 grams of chocolate and a glass of water.

The fruits should not be too sweet, but with sourness, so that the final dessert does not turn out too cloying. The chocolate is grated or chopped into small pieces with a knife to form chocolate chips. The apples are thoroughly washed and removed from the tail. Wooden chopsticks, usually sold with Chinese dishes, are placed in the resulting recess.

Next you need to prepare the sugar syrup. Sand crystals are poured into a saucepan or ladle and filled with warm water. A small fire is lit and the container is placed on the stove. For thirty or even forty minutes, you will have to periodically stir the substance until all the sand has dispersed and the contents have a golden hue.

It is important not to overcook the caramel and not let it burn. Readiness is determined by a tricky experiment: a few drops are poured onto the surface of a clean plate. If they instantly change the substance to a solid, then the solution is ready for use.

Then you can proceed directly to caramelization. The saucepan is removed from the stove, and the fruits on sticks are dipped into sugar syrup. You need to twist the fruit so as to cover the entire surface as much as possible. Without waiting for it to harden, the caramelized fruit is dipped into chocolate chips, after which the fruits can be carefully placed on a separate dish. It is necessary to maintain gaps between the apples so that they do not touch. The presence of sprinkles is explained by the fact that chocolate will prevent the sugar from dripping and make the dessert more stable.

It is important to mention that not everyone is comfortable eating whole fruits, so in dessert it is allowed to replace whole fruits with apple slices. It's also a good idea to add some coloring - for example, making a popular dessert with red glaze. It can be stored for two days in the refrigerator. It is better to lay baking paper under it or wrap the fruits in foil.

Fruit pieces are prepared as follows. First, prepare half a kilogram of selected apples, a glass of sugar, 150 grams of starch, a glass of sesame oil and a glass of regular sunflower oil. It all starts with processing the fruit: the apples are washed, peeled and freed from the central part with the seeds. Each apple is cut into four parts, after which each part is divided into slices of the required size. The slices must be rolled in 100 grams of potato starch. At this time, a substance resembling sour cream is mixed from the remaining substance and water at room temperature. The apples are dropped into it so that they are covered on all sides.

A cup of vegetable oil is poured into the frying device, after which it is heated to a temperature of 170 degrees. The boned slices are fried for three minutes on each side over medium heat and placed in a clean bowl. In another frying pan, a glass of sesame oil is heated, and the prepared sand is poured into it. By gently stirring the substance, you need to ensure that the granules completely disappear. As soon as the oil turns golden, add the fried apples. Everything is quickly stirred and the pieces are put back on the plate. It is recommended to sprinkle the finished dessert with fresh sesame oil before eating.

Bright “varnish” apples covered with ruby caramel will definitely attract both adults and children. The ingredients you will need are a kilogram of fruit, a glass of water, three cups of granulated sugar, three-quarters of a cup of corn syrup and a package of dye. Syrup can replace starch dissolved in water. The apples are washed, dried, and pieces of wood are stuck into them.

Caramel is made from sand, syrup and plain water. Dye is immediately added to these ingredients. The saucepan is placed on the stove - it will remain there until the sand crystals are completely dissolved. The tray is prepared properly - covered with a silicone mat or baking paper greased with oil. Apples are dipped into the finished caramel so as to completely cover the surface. After that, they go to “rest” on the pallet.

It is possible to prepare this dish in a slow cooker - the process will be faster and easier. The ingredients will need to be purchased from two to four apples, 200 milliliters of hot water, two tablespoons of butter, three tablespoons of sugar and fresh mint for decoration. The “Multi-cook” mode is selected, and the temperature should correspond to 160 degrees. Sugar is poured into a container that has not yet been heated, after which it is heated until its state changes from sand to caramel.

Butter is also added there, which must be stirred until completely dissolved. At this time, the apples are washed, peeled, freed from the central part and divided into two halves. They are placed cut side down in the caramel and left with the lid closed for five minutes. After the specified period, they are carefully turned over, after which they are left for another five minutes.

An interesting solution would be to choose apples baked in the oven. Initially, you will need to prepare four apples and two-thirds glasses of freshly squeezed apple juice, three tablespoons of butter and a glass of granulated sugar. In addition, the cook will need a third of a glass of water, half a glass of milk, and half a teaspoon of vanilla extract. At the first stage, water and sugar are transformed into syrup - boiled over low heat for about a quarter of an hour. Upon completion, the frying pan is removed from the heat, and after a minute its contents are mixed with a spoonful of butter. At the next stage, milk is added there, the frying pan is returned to the hob, and its contents are constantly stirred for two minutes. When the mass thickens, it can be removed from the stove and combined with vanilla extract.

The oven heats up to about 170 degrees Celsius. At this time, the fruits are washed and cut into flat plates, from which the fruit can be made. Apple juice is mixed with melted butter, and the resulting mixture is poured over the apples. Everything is put into the oven for forty-five minutes, and the juice that flows onto the tray constantly returns back. The finished apple is placed in an individual bowl, and approximately a quarter of a cup of syrup is poured into its center. If desired, everything can be decorated with nuts and dried fruits.

The recipe for apples in soft caramel, which is made from ordinary toffee, looks very interesting. You will need about 400 grams of candy, two tablespoons of water, a bag of vanillin and twenty grams of butter. The number of apples is determined independently. Butter, vanilla and sweets are placed in a saucepan and filled with water. Everything is placed on a small fire and melted until a homogeneous substance is achieved. Prepared apples are placed on pieces of wood and dipped in syrup.

A mirror-like gloss can be achieved by preparing caramelized apples with lemon juice.

In addition to the fruit, you will need to prepare 150 grams of granulated sugar, two tablespoons of water and a tablespoon of lemon. Mix all the above ingredients over low heat until the consistency is smooth and the sugar has dissolved. The process should be continued until a beautiful shade of amber appears. You can check the readiness of the syrup by scooping a little liquid into a spoon and tossing it into cold water. If it sets immediately, then the caramel is ready. The apples are dipped into the liquid and then laid out to dry on baking paper.

Apples cooked in Chinese style will be an exquisite delicacy. To prepare you will need one apple, 200 grams of sugar, a teaspoon of sesame seeds, a miniature piece of butter, water, four tablespoons of flour, an egg and a teaspoon of sunflower oil. The oven is heated to 200 degrees Celsius. At this time, water with butter is brought to a boil, supplemented with flour and cooled for several minutes. Then one egg is added to the mixture, everything is mixed again - the batter is ready.

The apple is peeled, pitted and cut into small pieces. The pieces are dipped in batter, rolled well and placed on a pre-coated tray. The dish goes into the oven for twenty-five minutes, then cools slightly. At the same time, caramel is cooked in a saucepan according to standard methods. You need to add sesame seeds to it. Pieces of apples in batter are dropped, a couple of pieces at a time, into the caramel, mixed, and then thrown into a container with previously prepared ice water. The finished fragments will need to be kept on a paper napkin that absorbs fat.

Even if caramel apples are prepared at home for everyday use, it makes sense to think about a beautiful presentation. Reviews say that apples look most impressive on a flat, round dish, painted in one shade. After processing in sugar syrup, the finished fruit should be dipped either in confectionery sprinkles, or in coconut flakes, or in pieces of finely chopped nuts or even seeds. If you melt a bar of white chocolate in a water bath, you can pour the resulting mixture over the dessert. Everything can be supplemented with some syrup or melted dark chocolate, and also sprinkled with powdered sugar. Fruits look very beautiful when they are painted with icing of different colors.

Washed apples must be dry before caramelizer appears on them. In addition, it is correct when the wooden stick reaches the core of the fruit - this will increase the stability of the entire structure and prevent inconvenience while eating. By the way, ice cream wood or even well-cleaned branches are also suitable for the role of sticks. Short toothpicks, for example, will not work, since the short length does not allow the fruit to be securely fixed. Otherwise it will end up in caramel. In addition, eating fruit on a short piece of wood is simply uncomfortable. Immediately after processing, it is correct to leave the apples on a sheet of baking paper to remove excess liquid.

You can serve caramelized apples with other pastries and drinks: mulled wine, tea, coffee and lemonade. The combination of fruits and ice cream will be very interesting.

Sometimes it happens that after the caramel dries, it turns out that it did not completely cover the fruit. Therefore, after the first layer has cooled, it is necessary to repeat the procedure. Too thick sugar syrup is brought to the desired consistency if you put it on low heat and stir vigorously. The container in which it is prepared must have thick walls and a bottom. Ready apples do not last long in the refrigerator, but if they are placed in a plastic bag and then in a tightly sealed container, the shelf life will increase to a week. Before serving, after cold, the fruit will need to be kept for an hour at room temperature.

You should also remember that there is a special technique for preparing apples in caramel. The device looks like a large saucepan for cooking syrup. If the caramelizer is an advanced model, then there is additionally an automatic device that places the finished fruit on sticks.

Bon appetit!

The idea of creating a business selling street food is capturing more and more minds and hearts. Small investments, quick payback and development opportunities make this industry very attractive. The only question remains choosing the right product. Most often you can find trays with various kinds of sandwiches, pizzas, hamburgers and hot dogs. For sweets, donuts and ice cream are popular. But all these products have become boring, and consumers will be happy with the new fashion for street food. One such option would be the sale of caramelized apples.

Relevance

Apples in caramel - truly all-season dessert. Ice cream is sold mainly in the summer, donuts - in cold weather. Apples will be scattered both during the New Year holidays, autumn slush, and in the hot summer and blooming spring.

For each season, you can come up with your own shade of caramel and additional decorations. The attractive appearance, sweet and sour taste and originality of presentation will appeal to customers and will make them return to the tray with a magical delicacy more than once.

Caramelized apples can be not only an excellent dessert, but also a fairly satisfying snack.

Caramelized apple on a stick: the history of the dessert

Caramelized apples have not yet revealed their secret of origin.

There is a version that a long time ago, a careless cook dropped a hot coal and an apple into a bowl of sugar. But it looks like a beautiful European fairy tale.

Information about recipes for similar desserts in China has been preserved. Their peculiarity is that they are served chilled so that the caramel crunches and cracks.

But it is more likely that the dish was first prepared in the East - since the 10th century, Arabs have been using sugar molasses as a natural preservative and pouring it over fresh and dried fruits for long-term storage. Preservation was especially important when preparing food for long journeys. Perhaps it was nomads who brought caramel apples to Europe.

The first information about caramelized apples in Europe dates back to the 18th century. The delicacy became widespread in the 19th century., but what distinguished it was its overly hard shell. And only in the last century a recipe for creamy soft caramel appeared, the taste of which is known to everyone now.

Advantages and disadvantages of this business

Like any business, the production and sale of caramelized apples has its own characteristics that make it easier (or hinder) doing business.

The undoubted advantages on the Russian market include low competition(in many cities the delicacy is simply not sold), novelty of the product, receptivity of the target audience(parents with children, youth). Indirect competition is also low, because Some desserts have already become traditional, and many consumers will prefer to try a new delicacy.

Attractive appearance The product plays an important role among the positive features of this business. Bright caramel in all shades of the rainbow and colored sprinkles will not leave the consumer indifferent and will attract a lot of attention, unlike most traditional types of street food.

Besides, taste dessert is of great importance. It stands apart from the usual typically sweet treats - ice cream and donuts. Apples in caramel attract with their sweet and sour fresh taste and do not cause heaviness in the stomach afterwards.

The most significant advantage is considered to be relatively small capital investment And short payback period, and omnipresence product.

The main disadvantages boil down to short shelf life of raw materials(according to standards, apples can be stored in the refrigerator for no more than 5 days) and finished products(caramel will “float” in 2-3 days). In hot weather, caramel may begin to melt just a couple of hours after cooking.

To be effective, it is necessary to carefully select apple varieties, because in the delicacy the fruit remains half-raw and its taste is felt extremely strongly. Bad apples can ruin the sales of even the most prepared entrepreneurs.

How much can you earn from caramelizing apples?

Basic capital investment will amount to approximately 45 thousand rubles. For online promotion, at first, groups and accounts on social networks will be enough. It is possible to administer these groups on your own and not invest funds in the first months.

Current expenses boil down to expenses for wages, rent, tax burden and raw materials.

Let's assume that the rent will be 15,000 rubles.

Earnings in the regions vary greatly, but approximately we can assume that a master will earn 500-1000 rubles per workday. To increase sales, it is advisable to tie part of an employee’s salary to a percentage of sales.

The approximate estimate for raw materials for the production of a unit of product is as follows:

  • apple – 5 rubles;
  • caramel mixture – 15 rubles;
  • granulated sugar – 2 rubles;
  • water – 3 rubles;
  • butter – 1 rub.;
  • napkins – 0.1 rub.;
  • sticks – 4 rubles;
  • paper bag – 0.5 rub.;
  • electrical energy – 2.4 rubles.

Total: the production of one caramel apple will cost 33 rubles. Medium market price of dessert is 80-130 rubles.

Let us assume that in the first period it is possible to sell 40 apples per day. Then the monthly revenue will be 40*100*30 = 120,000 rubles.

Total cost of sales (excluding investments) = 33*40*30 + 750*30+1.3 + 15000 = 83850 rubles. (earnings are taken at the level of 750 rubles per workday, price – 100 rubles per piece).

Since the profit from sales was relatively small, it is advisable to pay income tax in the amount of 15% of the difference between income and expenses, which will amount to 5422.5 rubles.
