We cut the head of Chinese cabbage at the base, separate the leaves and wash them thoroughly, especially the upper corrugated part. Then we put them in a stack of 3-4 pieces and chop them into strips. If the head of cabbage is visually clean, then it is not necessary to disassemble it into leaves; just chop it into strips.




Transfer to a deep bowl. Sprinkle with fine salt, about half a level teaspoon. Grind slightly. Do not press or squeeze the cabbage too much; it will become soft and lose its crispness, although it will give more juice. Leave for a few minutes.
